 Classic Hyderabadi Chicken Biryani (Dum Style)

Preparation Time: 30 mins | Cooking Time: 1 hour | Serves: 4





Ingredients:

For Marination:

  • 500g chicken (with bone)

  • 1 cup yogurt

  • 2 tbsp ginger-garlic paste

  • 1 tsp turmeric

  • 2 tsp red chili powder

  • 1 tsp garam masala

  • 1 tbsp lemon juice

  • Salt to taste

For Rice:

  • 2 cups basmati rice (soaked 30 mins)

  • 4 cups water

  • 1 bay leaf, 4 cloves, 1 cinnamon stick

  • 1 tsp salt

For Layering:

  • 2 large onions (sliced & fried golden)

  • 1/4 cup mint/coriander leaves

  • 2 tomatoes (sliced)

  • 1/2 cup fried cashews & raisins

  • 1/2 tsp saffron (soaked in 2 tbsp milk)

  • 4 tbsp ghee

Method:

  1. Marinate Chicken: Mix all marinade ingredients, coat chicken, and refrigerate for 2+ hours.

  2. Cook Rice: Boil rice with whole spices until 70% done. Drain and set aside.

  3. Layer in Pot:

    • In a heavy-bottomed pot, spread ghee.

    • Add marinated chicken → fried onions → mint/coriander → tomatoes → half-cooked rice.

    • Repeat layers. Top with saffron milk, fried nuts, and ghee.

  4. Dum Cook: Seal pot with foil, cover lid, and cook on low heat for 25 mins.

  5. Serve Hot with raita and salad.
