Classic Hyderabadi Chicken Biryani (Dum Style)
Preparation Time: 30 mins | Cooking Time: 1 hour | Serves: 4
Ingredients:
For Marination:
500g chicken (with bone)
1 cup yogurt
2 tbsp ginger-garlic paste
1 tsp turmeric
2 tsp red chili powder
1 tsp garam masala
1 tbsp lemon juice
Salt to taste
For Rice:
2 cups basmati rice (soaked 30 mins)
4 cups water
1 bay leaf, 4 cloves, 1 cinnamon stick
1 tsp salt
For Layering:
2 large onions (sliced & fried golden)
1/4 cup mint/coriander leaves
2 tomatoes (sliced)
1/2 cup fried cashews & raisins
1/2 tsp saffron (soaked in 2 tbsp milk)
4 tbsp ghee
Method:
Marinate Chicken: Mix all marinade ingredients, coat chicken, and refrigerate for 2+ hours.
Cook Rice: Boil rice with whole spices until 70% done. Drain and set aside.
Layer in Pot:
In a heavy-bottomed pot, spread ghee.
Add marinated chicken → fried onions → mint/coriander → tomatoes → half-cooked rice.
Repeat layers. Top with saffron milk, fried nuts, and ghee.
Dum Cook: Seal pot with foil, cover lid, and cook on low heat for 25 mins.
Serve Hot with raita and salad.
